::Chicken with Zucchini and Onions & Batsmati Rice::

This is something I came up with the other day out of desperation for something delicious and healthy, using only what i had available in the house.

I used a whole onion and a large zucchini. Then the chicken zucchini and onions where seasoned with worcestershire sauce and salt & pepper. It’s all cooked down until the onions and the chicken start to caramelize. The secret to this recipe is using WAY more onion that you think you will need. The onion cooks down so much that you only end up with about a third of what you think you will by the end of it.

This is really delicious. I serve it with batsmati rice because the flavor of the rice compliments the dish very well!

::Chicken and Vegetables with Mustard Sauce::

This dish is a hit around my house. It tastes good. It has lots of vegetables. And it’s easy to make!

I use an organic frozen vegetable mix to make this dish. Chicken is sauteed in the pan with olive oil, garlic, and salt & pepper. Then it’s when it is fully cooked, i add a little bit of soy sauce for flavor…Just a splash.

Then i add the vegetable mix and cover until the they are no longer frozen. The mustard sauce is super easy to make…it’s just mustard! I pick a good looking mustard (really you can use anything you like) and then squeeze about 2 tablespoons into the pot and mix with the chicken and vegetable. Then you let it cook for 5 to 10 minutes (covered) string often to keep from burning on the bottom. Sometimes for added flavor, I will use two different kinds of mustard. I smooth one and a grainy one.

Season with salt and pepper to taste, and serve with rice.

My son loves this meal almost as much as I do! It’s loaded with vegetables so i feel good about serving it to him. And he usually cleans his plate! I love this meal because it doesn’t leave me feeling bloated after eating. And I usually have leftovers for lunch the next day.  :)

::Cherry Tomato~Cucumber Salad::

This amazing dish is one of my favorites for a few reasons.

1. It is delicious and fresh and zesty.

2. It is quick and easy to prepare.

3. It makes me happy to prepare and to eat.

4. You can make a lot of it at once because it keeps very well in the fridge.

5. (possibly the most important one) MY SON WILL EAT IT WITHOUT A FIGHT! And with so many veggies, that can’t be bad.

You can find the recipe HERE. But i recommend a few variations. I make mine without parsley and without mozzarella. Also, I like to use white onions instead of super sweet ones. And lastly, a fresh squeezed lemon is way better than lemon juice in a bottle!

There is a version of this recipe that i use a lot, where you put the salad into tartlet cups with feta cheese melted in the bottom. You can find that recipe HERE. It is very good, but on days when I’m not feeling like having the cheese or the tartlets, I couple the plain salad with EVERYTHING! It’s amazing with eggs. It’s amazing as a side dish for lunch or dinner. AND it’s amazing by itself as a light lunch or a snack!

All in all….this is one of my most favorite recipes of all time! I hope you enjoy it!

::Underpants Pasta::

This is a recipe i made up a long time ago. The only problem with making this dish is that it tastes so good, I always end up eating way too much!

It’s a pretty simple dish to make. Angel Hair Pasta, Chicken, and a homemade light tomatoe sauce. As you can see, there are chunks of tomato and green pepper…there is also a lots of cheese!

The name of the dish is actually a funny story! When i came up with the dish, I was working with whatever i had in my kitchen. It was a summer evening and the day had been VERY HOT! And lucky me…my Air Conditioning broke! So i cooked the dish while wearing my bra and underwear. And on that night UNDERPANTS PASTA was born! The recipe has been tweaked a bit over the years to perfect it. But I’m telling you…it is the best stuff ever!

::Breakfast of the Gods::

OH MY! This was heavenly! I had bacon and sausage links with scrambled eggs and a waffle with syrup and cream cheese. I’m from the south so a breakfast like this is completely normal…though a bit more decadent that i usually allow myself.

I cooked the bacon and the sausage first. I left the leftover grease in the pan and then cooked the eggs in it. It gives the eggs an amazing flavor! I also threw a little bit of cheese in the eggs to give it another kick of flavor. They were the best eggs I’ve eaten in a long time.

The waffel was something that i dreamed up or something. I’ve never had a waffle like this before. I toasted a regular waffle and then drizzled a little bit of maple syrup on it. Not enough to drown it but enough for the waffle to soak up the flavor of the syrup. Then i put some cream cheese on the top. IT WAS SO GOOD! I love combining flavors to see what happens. And sometimes (like in this case) it turns out fantastic.

Yesterday’s Detour from the normal

I find when I’m stressed that i often eat fast food. It’s comforting and easy and i don’t have to think about cooking or shopping. So yesterday for lunch….i had a Whopper Jr. and Onion Rings from Burger King.

Today i regret this decision. I guess I’ll be working out a little extra to get rid of that mistake! But hey, at least it tasted good  :)

::Salmon and Peas for Lunch::

I was super hungry after i picked up my son from school today. I knew that i had a salmon fillet already thawed out in the refrigerator and ready to cook. The original plan was to cook it with some spinach and a nice ripe tomato sliced on the side. Unfortunately, when i got home, i found that i did not have spinach or a tomato as i had thought. So i improvised and had baby peas on the side instead. It was really good!

The salmon fillet looks small because i cut it in half and shared with my son. I’m fortunate that he likes the real thing better than fish sticks…it makes me feel like he’s eating good AND enjoying the food. And that is something really important to me as a parent. I like to cook healthy foods that he will want to eat as well. I believe food should be enjoyed.

I cooked the salmon in a little bit of olive oil with some fresh minced garlic and a touch of salt and pepper. Nothing too fancy but it was SOOOOO delicious!

This really hit the spot for me.

The First Post

Hello everyone! My name is Alex and this is my first post in my new blog. I am a food lover and a self taught chef. I have no training but i love to experiment. I love food! I will be posting picture of what I’m eating, what I’m cooking, recipes i like, where I’m going to dinner, restaurant reviews and any other fun food related fun things i come across.
